The truffle : |
|
|
Welcome to Sorges in the Périgord (Dordogne),
a "green" holiday resort. |
|
|
| The truffle is a delicious, much sought-after underground mushroom, famous
since ancient times. |
The Perigord Truffle
or tuber melanosporum, is the
most sought-after species in France. This truffle grows in association with oak and hazelnut trees, but also with
hornbeam, lime trees, black Austrian or Alep pines, in chalky ground of between 100 and 1000 meters in altitude.
The truffle reaches maturity in January or February.
It can take up to 10 years of working and tending the trees before the first
harvest. The truffle has an incomparable perfume which it passes on to dishes such as the truffle omelette. |
The truffle has succeeded in keeping an aura of mystery, which makes it one of the most precious ingredients
in our gastronomy. It is the black diamond of
Perigord cookery.
Sorges, the capital of the Truffle in the Perigord, has created a Truffle
Museum in the aim of helping to develop the culture of truffles.
This museum, which holds many specialised documents, is of interest to both the public and professionals. |
Exhibits cover an area of 350 m², with a video film projection area. The visit lasts about 1 hour. You
will learn all about the Perigord Truffle and other varieties.
